Easy Bacon and Eggs

My husband eats egg substitute several times a week. He prefers it fixed omelet-style with onions, green peppers, mushrooms, bacon and cheese. I chop the veggies in quantity once a week, then saute enough for several days at a time and store in the fridge. Also, when I have time, I microwave a whole pound of bacon at once, wrap it in a paper towel, place it in a plastic bag and keep in the refrigerator for later use. —Clara H., Punta Gorda, Florida
